Haste Makes Waste

One of my weekly grocery purchases both personally and for Support Suppers are boxes of mixed greens for daily salads. It's a product that has evolved in such a way that makes it easier than ever to make beautiful salads on a regular basis. But while I appreciate innovation, it drives me nuts when I crack open a brand new box with an expiration date over a week away only to find parts of it on the verge of spoiling.

I thought it was just me until I noticed people at the warehouse stores examining every box looking for moisture like I do. I knew it was widespread when I overheard my mother-in-law complaining about it to my husband while preparing dinner one night on our recent visit, as she picked through a huge box looking for salvageable leaves.

In my personal opinion, I'd rather pay the same price for the same box with less lettuce if it meant more room for the lettuce to breathe and avoid spoilage and waste. Since that's probably not going to happen, create this yourself by opening a box of lettuce as soon as you get home from the store. Store a portion of the greens in a resealable plastic bag with a paper towel. Loosen up the remaining greens and keep them stored in the plastic box they were packaged in also with a paper towel inside. The towel will absorb the moisture and keep your greens crisper, longer.
